raspberry lime rickey all grown up

Before moving to Boston, I had never heard of a raspberry lime rickey, a favorite of Mr. KC’s, a Boston-native. The recipe is simple (and sweet) enough. Raspberry syrup, lime juice, soda water. It’s the perfect pairing for a hot New England day.
So, when a friend came up with the idea for a grown-up version of the traditional lime rickey, we were all ears. The cocktail is dangerously good. Dangerous because it just doesn’t taste like alcohol. And on a warm spring/summer day, it goes down all too easily. This cocktail was a staple of our casual bbq get-togethers here in Switzerland all last summer and now that the patio is open for business once again, we find ourselves mixing these drinks up once again. This drink is a perfect cocktail for outdoor parties because it’s so simple, yet so dang good. In fact, you may find yourself cursing me for introducing you to it. In which case, I’m sorry.

raspberry lime rickey
ingredients
- raspberry vodka
- diet Sprite or 7up
- fresh limes
- ice, lots of ice
directions
- Add plenty of ice to a glass.
- Add 1 1/2 oz vodka (we actually just pour and count to 3 quickly). Top the glass off with soda.
- Juice a quarter lime into the glass.
- Garnish with a lime wedge.
